Arrange 6 cups baby spinach leaves (about 6 oz) on serving platter. Top with: - 10 sliced mushrooms - 1 container (6 oz) raspberries - 1 cup halved grape tomatoes - 2 tbs. each sliced fresh basil and pine nuts In bowl, whisk: - 1/4 cup olive oil - 1/4 cup fresh lime juice - 2 tbs. honey - 1 tsp. grated peeled fresh ginger - 1/8 tsp pepper Drizzle over salad; toss and serve. Serves 6. Did you know? Limes are rich in Vitamin C, an antioxidant your body needs to convert fat to fuel. Tomatoes are loaded with betacarotene, alphacarotene and lycopene -- three antioxidants that whittle your waistline. Raspberries contain ketones, antioxidants that destroy fat cells. Mushrooms are the only veggie with Vitamin D. Pine nuts are a source of monounsaturated fatty acids. That does sound like a great recipe, though you must have a very sweet tooth, Sharon, as probably one teaspoon of honey would be enough for us.
We often have the olive oil and lime juice combination, as we have a very prolific lime tree. I also have fresh ginger every day, one of my favourite things to eat, though it is expensive, last time was nearly $4 for a piece about 4 inches long. I am going to grow it, though I have to contain it.
I grew a Thai ginger a few years ago, one not quite as 'hot' as the one we buy at the greengrocer, but it was huge, about 6 foot across in one season and eventually we managed to dig it out, I thought it was going to take over the whole backyard.
