For the Christian church Shrove Tuesday is a day of celebration, the last chance to feast before the austerity of the 40 days of Lent begins on Ash Wednesday. Traditionally, all the foods that are forbidden during Lent – meat, eggs, fat and milk – are eaten up on Shrove Tuesday. This recipe follows those rules, but you can enjoy it any time you like! These pancakes would make for a delicious dinner on Shrove Tuesday, or any day. These Shrove Tuesday pancakes fit this traditional English children's rhyme... A-shrovin', a-shrovin', I be come a-shrovin', A piece of bread, a piece of cheese, A bit of your fat bacon... Cheese, corn and bacon pancakes 1/3 cup cornmeal 75mL 1/3 cup boiling water 75mL 1 1/4 cups Robin Hood 300mL Original Homestyle Pancake Mix 1 cup water 250mL 1/2 cup grated Cheddar 125mL cheese 1/2 cup corn kernels 125mL 1/2 cup diced cooked bacon (8 slices) 125mL 2 tbsp chopped green 30mL onion 1. Preheat skillet or griddle to medium-high heat (375ºF/190ºC). 2. Pour boiling water over cornmeal. Set aside. 3. Combine pancake mix and water, mixing until smooth. Add cornmeal mixture; mix well. Stir in remaining ingredients. 4. Cook pancakes as directed on package using about 1/4 cup (50mL) batter for each. Makes about 10 pancakes. Tips: Try ham or cooked sausage instead of bacon. Serve with salsa for a real treat. Add a green salad, green beans or coleslaw to make the meal complete. Attachments:
