Apple Harvest Pancakes Fill your house with the scents of autumn while you are cooking these hearty harvest pancakes. They're filled with good-for-you oats, fruits and nuts so you won't feel guilty about eating more than one. 1/2 C. white flour 1/2 C. quick cooking oats 1 tsp baking powder 1/8 tsp salt 1 tsp apple pie spice 1 tsp brown sugar 1 med. egg, beaten 2/3 C. milk 1 medium Granny Smith apple, coarsely grated 1/4 C. raisins 1/4 C. pecans, chopped In a bowl, stir together the first 6 dry ingredients. Stir in beaten egg and milk; mix thoroughly until well combined. Mix in the apple, raisins and pecans. Melt 1 tsp butter in a pan over medium heat. Drop pancake mix into the pan by the 1/4 cupful and slightly flatten into a circle. Watch carefully as they cook. The edges of the pancakes will turn light brown when they are ready to be flipped over. Do not rush to cook by raising the heat any higher than medium because the inside of the pancakes might not turn out to be fully cooked if you do. Serve warm with Maple syrup.
