I love Greek food but the one thing we probably eat the most of here at home is my daughter, Yvonne's Greek Salad. Dressing 1/4 cup red wine vinegar 1/2 cup extra virgin olive oil 2 t oregano 1 clove garlic, minced Salt and pepper In a small bowl, whisk together the ingredients, seasoning with salt and pepper and allow to stand for ±1 hour. Salad 1 cucumber (we use the long English variety) 2 green peppers 4 large, ripe, firm, beef tomatoes 1 red onion, peeled and thinly sliced 20 calamata olives 250 g feta cheese, coarsely crumbed Peel cucumber if using field cucumbers .... if using English cucumbers you do not need to peel. Cut into half moons ±1cm thick (remove any seeds). Cut the peppers in half, deseed and cut into thin strips lengthways. Coarse chop the tomatoes or cut them into wedges; whatever you prefer. Combine all the salad ingredients in a bowl, together with the dressing and toss well. Allow to stand for ±1 hour before serving. Serves 4-6. Attachments:
