Read your Omelette recipe Sharon (looks good too!), and it reminded me of another Omelette recipe I'd come across some time ago (can't recall where I got it), but it is another easy one to try .... Pot Omelettes: Heat water to a rapid boil in a LARGE pot In a large zip-lock bag, place 2 eggs, some cheese, ham or whatever you desire. * (I found it easier to put all your ingredients into a small bowl or measure cup and whisk together first before pouring into the bag). Close the bag tightly; shake well to mix. Carefully drop the bag into the pot of boiling water Cook EXACTLY 13 MINUTES ... no longer. Carefully remove from pot Open bag (be careful of steam escape); Roll out your omelette onto a plate Tip: if more than one person wanting an omelette, each can be made separately to their own liking and cooked in same way. Comes out cooked to perfection. Easy and less mess. Enjoy.
